Time was when Mason jars were in every Earth Mama’s pantry because every Earth Mama and her Earth Daughters and Earth Sons were hellbent on canning everything in sight. Today Mason jars are enjoying popularity in expanded circles, particularly Pinterest, where they’re pinned as centerpieces for weddings, solar lights for gardens and patios and containers for household cleaning and beauty products. Oh, Mason jars, we hardly knew ye before this! But one idea we really love is using those jars to keep our meal portions in check.

Blueberry Pancakes in a Jar
Ingredients 1 c flour 1 Tbs baking powder 2 Tbs organic sugar 2 Tbs vegan margarine, melted (or sub. real butter) 3/4 c nut milk (or sub. dairy milk)
Combine flour, baking powder, and sugar in a small bowl, and whisk until combined.
Stir in melted margarine and milk until batter forms.
Place blueberries on bottoms of jars, then fill about halfway with batter.
Pancake will rise while cooking.
Microwave for about 1 minute for small jars, or 90 seconds for larger jars.
Let cool before topping with more margarine, blueberries, and syrup.
Makes 4 small jar cakes or 2 large ones.
