Some of know people who are in a state of perpetual training. Iron Man. This Marathon. That Marathon. Rugby season. Whatever. Really. WhatEVER.
But even though we personally are not marathoners in the strictest, most athletic sense of the word (you know where we’re going with this, right?), we do like to keep our bodies in tip-top temple shape. And so we do, in a sense, train. We also, because we train, maintain a constant lookout for snacks that aren’t going to satisfy us for this long and then leave us wanting more.
Enter high protein snacks, nibbles that actually do make a dent in hunger, don’t ratchet up our blood sugar and, if we don’t cheat too much, help us drop a pound or two when we need to.
Here’s a crazy great little yummy, crazy easy to make, crazy easy to take with.
1 (12 ounce) package frozen shelled edamame (green soybeans)
1 Tbs olive oil
1/4 c grated Parmesan cheese
salt and pepper to taste
Preheat the oven to 400 degrees F.
Place the edamame into a colander and rinse under cold water to thaw.
Spread the edamame beans into the bottom of a 9×13 inch baking dish.
Drizzle with olive oil. Sprinkle cheese over the top and season with salt and pepper.
Bake in the preheated oven until the cheese is crispy and golden, about 15 minutes.
Snack on, marathoners!
